What about NiMH? I want to be able to charge a 12V pack from my car battery.

Just put them through a conditioning cycle once in a while to keep them happy. You probably want to monitor the current when you first hook them up. May be kind of high if the pack is pretty drained. Will you be charging them with vehicle running? Without the engine, you may only be charging them to 85-90%... I'd wait and see what others say. I'm not sure enough to recommend it just yet.
